Toss the question out. It could indeed be paradigm. A paradigm is a WIDELY accepted example, belief, or concept. This makes more sense because "broader" goes well with "widely". Eating locally grown food started with young people, and then it become a more widely accepted or known concept.

I believe you're referring to the question that starts at 3:50 in the above video.

I'd argue that PARADIGM is too strong here.
The words in the passage suggest that SOME/MANY people are into locally-grown food, whereas PARADIGM suggests that this is the new standard for MOST people.

Perhaps we can agree to disagree on this one :-)

Hi Brent, why is the correct answer is D? As consummate mean perfect, or complete in every way. I'm not sure how it relate with restauranteurs? Could you help clarify? Thanks Brent

First of all, I should note that a restauranteur is someone who operates a restaurant.

The passage tells us that opening a restaurant (aka eatery) is a daunting task for pretty much everybody, EXCEPT a certain group of people.

Well, the only group of people who wouldn't find all of these tasks daunting would be someone who has a lot of experience running/starting restaurants.

An experienced restauranteur is similar to a consummate restauranteur.

Thanks Brent. It make sense from your explanation. However I couldn't find this meaning as your explanation in Google or Cambridge Dictionary. How do I dealt with this kind of situation? Another word e.g wax: go up or advance...again I couldn't find this explanation anywhere to make a sentence.

Highly skilled, experienced, really good, complete in every way, knows what they are doing, and consummate are all similar terms.

So, a consummate restauranteur would be someone who is really good/perfect at operating restaurants. So, a consummate restauranteur wouldn't find all of the required tasks daunting because they already have experience completing such tasks.

The Oxford dictionary's definition of consummate says: showing a high degree of skill and flair; complete or perfect.
I think this definition works for the question.

When searching for definitions, be sure to check out the word's synonyms, since they will give you a broader idea of what the word means.

Could it be that these words are so rarely being used or quite sophisticated or only in very formal writings that's why it's so difficult to find the matching meaning?
